Quiche de membrillo y Stilton de Ottolenghi

Último día, a última hora, pero lo he conseguido. Y eso que tenía la receta elegida desde que se hizo público el nombre del cocinero elegido para el mes de diciembre: Yotam Ottolenghi. Ya estoy por aquí con el reto Cooking the Chef el día en que los Reyes Magos han llegado en barco a Cartagena. Espero que a Aisha y a April les traigan muchos regalos y que les guste mucho la receta: quiche de membrillo y queso Stilton. Según Ottolenghi, es "the one-stop answer to Christmas meals for vegetarians" (la única respuesta a las comidas de Navidad para vegetarianos).


Ingredientes:
  • 700 gramos de calabaza pelada y cortada en cubos de 2 cm.
  • Una cucharada y media de aceite de oliva
  • Una plancha de hojaldre de la mejor calidad
  • 200 gramos de queso Stilton
  • 75 gramos de carne de membrillo cortada en cubos de 1 cm.
  • 3 huevos
  • 150 ml de nata
  • 150 gramos de queso crema
  • Sal y pimienta

Preparación:

Lo primero que tenéis que hacer es asar los cubos de calabaza. Los ponéis en una bandeja de horno rociados con el aceite de oliva, sal y pimienta. Con el horno precalentado a 200 grados unos 30 minutos.
Mientras, preparáis el hojaldre. Ponéis la plancha en el molde elegido, le colocáis encima garbanzos –por ejemplo– para que no suba y la metéis en el horno durante 20 minutos. Dejáis que se enfríe.
En un bol batís los huevos con la nata, el queso, la sal y la pimienta.
Cuando estén listos hojaldre y calabaza, termináis la quiche:
encima del hojaldre –una vez quitados los garbanzos– ponéis los cubos de calabaza y los de membrillo. Le vertéis la mezcla del bol y el queso Stilton desmenuzado, y de nuevo, al horno a la misma temperatura otros 30 minutos. 
Huele de maravilla y sabe mejor aún.


Observaciones:

Los garbanzos, como ya no se pueden usar, los guardáis para otras veces. 

He cambiado la pasta quebrada de la receta original por hojaldre.

El cocinero recomienda que se sirva caliente o a temperatura ambiente.

English recipe for my Bournemouth family:

This quiche, in canapé form, was one of the most popular items on our catering menu at Ottolenghi a couple of years ago. The combination of a sharp blue cheese alongside the intense sweetness of membrillo creates a wonderfully satisfying drama in the mouth. It´s the one-stop answer to Christmas meals for vegetarians.

Ingredients:

  • 1 médium butternut squash, peeled and cut into 2cm cubes (700g)
  • 1 1/2 tbsp olive oil
  • 250g best-quality shortcrust pastry plain flour, for dusting
  • 200 g Stilton, crumbled
  • 75 g membrillo (quince paste), cut into 1 cm cubes
  • 3 eggs
  • 150 ml double cream
  • 150 ml crème fraîche
  • Salt and black pepper

Method:

Preheat the oven to 220º C/200 C Fan/Gas Mark 6.
Toss the butternut in the oil with 1/4 teaspoon of salt and some black pepper ans spread out on a baking tray. Roast for 30 minutes, turning once, until Golden Brown. Set aside to cool and reduce the oven temperatura to 190º C/ 170º C fan/ Gas Mark 5.
Roll out the pastry on a floured work Surface, roughly 3 mm thick , and transfer it to a 24 cm quiche or flan tin. When lining, leave some pastry hanging over the edge.
Prick the base of the pastry with a fork and chill for 20 minutes in the fridge. Line the pastry case with baking parchment, fill it with baking beans and cook in the oven for 30 minutes. Remove the beans and paper and continue to cook for 10 minutes, until the pastry is golden brown. Remove and leave to cool.
Spread the roasted squach out on the base of the quiche, dot the Stilton between and sprinkle the membrillo all over. Place the eggs, cream and crème fraîche in a mixing bowl with 1/4 teaspoon of salt an some black pepper.
Whisk together and then pour this over the squash, leaving some of the filling exposed.
Place in the oven four about 30 minutes, until the custard has set. Remove from the oven and allow to rest before removing from the tin and breaking off the hanging pastry. Serve warm or at room temperature.
